Jicama Yogurt Fruit Salad For The Soul

Jicama Yogurt Fruit Salad 2I’ve been so inspired to make healthier choices for my family and me, including my pups, that I have been cooking dinner every night.  I have been trying to eat clean foods and teach my daughter Sophie that we need to take care of our bodies.  I have been so busy cleaning my soul and doing good things for dogs, that I almost forgot I have to keep my body clean as well.  We have all embraced our new eating habits and things are running smoothly.  Occasionally, I get requests for something sweet after dinner and the paws start scratching at my legs under the table too.  I do have to remind myself to choose as healthy as possible, but once in a while we deserve a little dessert.  So tonight we are having Jicama Yogurt Fruit Salad.

Jicama Yogurt Fruit Salad

6 oz. of plain cultured coconut milk

1/4 cup jicama chopped into small cubes

1/4 cup chopped strawberries

1/4 cup blueberries

1 tsbp. honey (optional)

Mix yogurt, jicama and fruits in a bowl.  If your sweet tooth is extra needy tonight, drizzle some honey on top! Enjoy!  This dessert is also a great treat for the doggies!  So tonight, the pups eat dessert with us!
