How I Became a Juicing Believer – Sweet Potato Beet Juice Recipe

Early this year I was diagnosed with a mild case of Fibromyalgia.  I had been suffering from migraines, body aches and constant fatigue.  I quickly made an appointment with my doctor.  She did a complete autoimmune panel of laboratory tests and I was sweating it out for about a week hoping that all was ok. I came back to see her and she referred me to a rheumatologist which freaked me out even more.  Another week later I visited the rheumatologist, paid my co-pay and walked out with a fibromyalgia diagnosis and a paper full of prescribed medications.  I was now going to have to take an anti-depressent for the fibromyalgia, a blood pressure medication for my migraines, and a pain killer for my aches and pains. UGH!!!  Now I am the type of person that hates taking pills, so I was not too happy about having to take three pills everyday.  Not to mention reading about the side effects of all three made me even more uneasy.  I just had to find something better that worked for me.

Sweet Potato Beet Delight

A good friend recommended I start juicing and detox my body of all the harmful things that accumulate from bad eating habits and our environment.  I did a three day juice detox and noticed that after the second day I felt so much better.  Yes I was hungry!  I cannot deny that living on juice for three days made me unhappy, but I also can’t deny how less bloated I felt and how much energy I had after just three days.  What surprised me the most is that the juices, even the eerie green ones, tasted so good.  My absolute favorite so far is the sweet potato beet juice with a dash of cinnamon on top.  It’s so good and incredibly refreshing.  I started replacing at least one meal with a juice consisting of mostly veggies.  But I do treat myself to a more fruity juice here and there. Yummy!  I have been doing this for a few weeks now and have seriously noticed a change.  It even improved my focus when working. There is still more work to be done, like starting a regular exercise regimen, but these past few weeks have seriously made me a juicing believer.

Sweet Potato Beet Delight

1 sweet potato

1 beet

1 green apple

4 strawberries

1 plum

Cinnamon (powder)

Juice all the veggies and fruits.  Stir and sprinkle cinnamon on top.  If you do not have a juicer you can use a blender.  Peel the sweet potato and beet. Chop the fruits and veggies into big chucks and place in blender.  Liquify on high until smooth. Enjoy!
