My Two Favorite Things To Do On A Rainy Day – Dragon Fruit Berry Juice Recipe

Today turned out to be a cloudy day in San Antonio.  The weather was actually quite beautiful until it started to rain and we were stuck indoors for the rest of the day.  Don’t get me wrong, I am not complaining.  It was the perfect opportunity for me to catch up on some reading and try a new juice that I have been dying to make.  Which by the way, are my two favorite things to do on a rainy day.

Lately, I have been scoping the produce section for new and delicious fruits and veggies to juice.  I came across the Dragon Fruit and was so pleasantly surprised at the yummy taste.  Not to mention its actually quite beautiful with its hot pink skin and black and white juicy center. It’s also rich in nutrients like vitamin C, calcium, iron and protein. Its packed with antioxidants and is known to aid with lowering cholesterol and high blood pressure.  And if you are kind of irregular like me, its fiber content can seriously help your tummy.  So, as soon as I tasted it I knew that it would make a great fruit to juice. I seriously could not wait and decided today would be the day.

Dragon Fruit Berry Juice

1 Dragon Fruit

1 small pack of raspberries

1 small pack of blackberries

6 strawberries

Cut the dragon fruit in half length wise and scoop out white flesh.  Make sure that all of the skin is completely off.  This skin is not edible.  Place dragon fruit and berries into blender or juicer. Mix and enjoy!
