Semana Santa or Holy Week brings back such great memories for me. The week heading up to Easter was always filled with happiness and joy. When holy week would coincide with Spring break, I would pack my bags and head back to Mexico to spend time with my cousins. When it didn’t, my cousins would come and visit us. So either way, it was always a time spent en familia. Many times it would fall right around my birthday too, so it was also a time full of celebrations. One of my favorite desserts is capirotada. This bread pudding like dish is usually eaten during the period, but you can definitely make it anytime. One of the great things about this dessert is you can add anything you want and change it up every time. Since regular bread is a no-go for me now, I have upgraded my capirotada with gluten-free rolls and dark chocolate for extra gooey deliciousness.

For this recipe you will need:

  • 6 gluten-free dinner rolls
  • 1/3 cup butter, softened
  • 2 1/2 cups water
  • 1 – 8-ounce piloncillo cone
  • 2 cinnamon sticks
  • 1 cup sweetened coconut, shredded
  • 1/2 cup walnuts, peeled
  • 8 dried figs, whole or sliced
  • 1/2 cup dried cranberries
  • 12 DOVE® Dark Chocolate Eggs
  • 1/2 cup Oaxaca cheese, shredded
  • 4 tablespoons colorful sprinkles

Capirotada For Easter with Gluten Free Bread - At The Fire Hydrant #SweeterPascuaHalve the rolls and evenly distribute pieces on a large backing sheet. Toast bread under broiler for 3-5 minutes or until lightly browned. Preheat oven to 350°. In a medium saucepan combine water, piloncillo cone, cinnamon sticks on medium heat. Bring to a boil then decrease heat. Simmer until piloncillo cone has melted. Remove cinnamon sticks. Butter a 1/2 baking 1.5 quart baking dish. Arrange half of the bread pieces on bottom of buttered baking dish. Sprinkle with one half of the shredded coconut, half of the walnuts, half of the dried figs, half of the dried cranberries, six DOVE® Chocolate Eggs, half of the cheese and drizzle with half of the syrup. Repeat until baking dish is filled to the top. If any syrup is left over, pour evenly over layers. Cover with aluminum foil and bake for 30 minutes or until golden and cheese has melted. Garnish with sprinkles and serve.

Cuando no, mis primos venían a visitarnos a nosotros. Así que de cualquier manera, siempre fue un tiempo pasado en familia. Muchas veces concedía con mi cumpleaños también, así que también ha sido una temporada llena de celebraciones. Y que es una celebración Latina sin deliciosa comida?

Este postre tipo budín de pan generalmente se come durante la cuaresma, pero claro que se puede hacer todo el año. Una de las mejores cosas de este postre es que le puedes añadir todo lo que tu quieras y cambiarlo cada vez que quieras. Como no puedo comer pan regular, he actualizado mi capirotada esta vez con panecillos sin gluten y huevitos de chocolate oscuro para hacer una capirotada mas deliciosa. Pare esta receta vas a necesitar:

  • 6 panecillos sin gluten
  • 1/3 de taza de mantequilla ablandada
  • 2 tazas de agua
  • un cono de piloncillo de 8 onzas
  • 2 ramas de canela
  • 1 taza de coco rallado endulzado
  • 1/2 taza de nueces peladas
  • 8 higos secos, enteros o en rodajas
  • 1/2 taza de arándanos secos
  • 12 Huevos de chocolate oscuros DOVE®
  • 1/2 taza de queso Oaxaca, rallado
  • 4 cucharadas de grajeas de colores

Capirotada For Easter with Gluten Free Bread - At The Fire Hydrant #SweeterPascuaCorta los rollos a la mitad y distribuye uniformemente las piezas sobre una bandeja para hornear. Tuesta el pan en el horno durante 3-5 minutos o hasta que estén ligeramente dorados. Precalienta el horno a 350 °. En una cacerola mediana combina el agua, el cono de piloncillo, la canela y cose a fuego medio. Lleva a ebullición y luego reduce el fuego. Cocina a fuego lento hasta que el cono de piloncillo se haya derretido. Retira las ramas de canela. Unta mantequilla a un molde para hornear de 1.5 cuartos. Organiza la mitad de los trozos de pan en el fondo de el molde para hornear. Espolvorea la mitad del coco rallado, la mitad de las nueces , la mitad de los higos secos, la mitad de los arándanos secos, seis huevos de chocolate DOVE®, la mitad del queso y rosea con la mitad del jarabe de piloncillo. Repite hasta que se llene el molde. Si queda jarabe, verte sobre las capas. Cubre con papel de aluminio y hornea durante 30 minutos o hasta que esté dorado y el queso se haya derretido.
